Bacon Zucchini Rice Casserole

Ingredients

1 lb bacon

1 cup onion finely chopped

3 tbsp butter

¼ cup flour

½ tsp pepper

cup milk

½ cup parmesan cheese grated

3 cups cooked rice

2 small zucchini coarsely shredded

oz sliced black olives drained

paprika

Directions

In fry pan, cook bacon on medium heat until crisp.

Drain, and cut into 1" pieces.

In same fry pan, cook onion and butter on medium heat 5 minutes.

Blend in flour and pepper.

Gradually add milk and cook, stirring until thickened. Stir in parmesan, the bacon pieces, rice, zucchini, and black olives.

Pour into lightly greased 12 x 8-inch baking dish; sprinkle with paprika.

Bake, covered with foil, at 375°F, 20 minutes. Remove foil; continue baking another 10 minutes.
