Deanne's Roll Recipe (dinner or cinnamon rolls)
Ingredients
2 cups Warm Water
1 pkg. yeast
7 cups AP flour, sifted (840 grams)
1/2 to 3/4 cup sugar
1 tbsp salt
2 eggs
1/4 cup melted butter
Description
This recipe came from Deanne's mom, who got it from her mom.
Directions
In a large mixing bowl, dissolve the yeast with the water. Add the sugar.
Mix in half of the flour with the salt.
Mix in the eggs. Mix in the butter.
Mix in the remaining flour.
Knead the dough.
Let rise until it doubles in size, then punch down and knead lightly.
For Dinner rolls:
Form into balls and place into greased pan.
Let rise until it doubles.
Bake for 30-35 minutes in a preheated 350°F oven.
For Cinnamon Rolls:
Roll out dough. (Dough can be worked 1/2 at a time.)
Brush with butter.
Sprinkle generously with cinnamon.
Cover with dark brown sugar, lightly pressed, approximately 1/4" thick.
Roll the cinnamon and butter in like a jelly roll.
Cut into pieces approximately 1" to 1-1/2" thick and place in a buttered or
greased
pan. (To Increase caramelization, pour 1/2 to stick of melted butter over the rolls in the
pan.)
Let rise until it doubles.
Bake for 30-35 minutes in a preheated 350°F oven.
Cover dough with a damp cloth while allowing to rise both times.
