French Silk Pie

A chocolate mousse pie.

French Silk Pie

Ingredients

Crust:

25 vanilla wafers, crushed

1/2 cup pecans, chopped

1/4 cup butter, melted


Filling:

3 1/2 ounces bittersweet chocolate, melted

3/4 cup butter

1 cup sugar

1/4 teaspoon salt

1 teaspoon vanilla

3 eggs

Directions

Combine first three ingredients and press into a 9-inch pie plate. Bake at 350 degrees F for 15 minutes.

Melt chocolate and let cool. (I use a microwave at 70% power for 1-1/2 minutes. Stir and let finish melting without additional heat.)

Cream butter, sugar, and salt. Beat in cooled chocolate and vanilla.

Add eggs one at a time, beating 4 minutes after each. The secret is in beating thoroughly.

Put in shell and chill. Garnish with whipped cream or substitute. Shaved chocolate strips and/or nuts may be placed on top of cream.
