Hamburger Buns
My basic hamburger buns.
Ingredients
3¾ cups bread flour (430g bread flour, 100g wheat flour, 50g rye flour, or just 470g bread flour)
½ cup dry milk powder
2 teaspoons instant yeast
2 tablespoons sugar
¾ teaspoon salt
1¼ cups water slightly warmed
1 egg beaten
2 tablespoons softened butter, cut into several pieces
Additional Butter, melted for brushing
Directions
Mix flour, milk powder, yeast, sugar, and salt in a stand mixer. Switch to a dough hook.
Add the water and egg, and mix until dough comes together, about two minutes.
Add butter one piece at a time, allowing each piece to incorporate before adding the next piece, about two minutes total.
Continue to knead on medium speed until dough is elastic and pulls away cleanly from sides of bowl, about 10 minutes longer.
Cut dough in half and roll each half out to a 1" thick circle.
Cut each half into six 3 1/2" rounds with inverted glass as a cutter.
Place on greased baking sheet far apart and brush with melted butter.
Cover and let rise until doubled, about one hour. Preheat oven to 350°F before this time is up.
Bake at 350°F for 25 minutes.
Notes
Note: Oven temperatures vary so check after 9 minutes to see if done. Some reviewers baked these anywhere from 12 to 30 minutes.
