Stuffed Potatoes

Ingredients

2 medium potatoes


2 tbsp butter or margarine

4–5 tsp milk

1/3 tsp salt

2 tsp minced onion

1 tsp grated horseradish

1 cup grated cheddar cheese

½ tsp paprika

Directions

Bake potatoes as usual, in oven or microwave.

While the potatoes are baking, combine the butter, milk, salt, onion, and horseradish in a small saucepan over medium heat. Heat until butter melts and the milk thickens, about 3 minutes.

Cut the baked potatoes in half lengthwise. Scoop out the pulp and mash it. Add the butter mixture to the pulp and mix well. Spoon the pulp mixture into the potato shells, top with grated cheese and paprika.

Broil at low heat until the cheese melts.
