Coal Lake Honey Pecan Pie

Ingredients

½ cup unsalted butter

1 cup packed brown sugar

½ cup liquid honey

1 tablespoon cider vinegar

2 teaspoons vanilla

¼ teaspoon salt

3 eggs, lightly beaten

2 cups pecans

Directions

Notes: Make sure your pie crust has chilled in the fridge at least 30 minutes before adding the filling.

Melt the butter in a sauce pan over medium heat, whisk in the brown sugar, whisk until smooth.

Remove from the heat and add the honey, vinegar, vanilla and salt. Whisk in the eggs.

Dock the pie crust.

Arrange the pecans in the pie crust. Pour the filling over the pecans.

Place on a baking sheet on the bottom rack of a 350F oven. Bake until the filling is set (approx. 50-60 minutes).

Let cool completely on a rack.
